Braising the tofu and tempe: Place the cut tofu and tempeh inside a large pot, add in 4 cups of coconut water until it just barely covers the tofu and tempeh. Add more if it's not enough. Add ground spices, bay leaves, and seasonings. Bring to a boil and then lower to let them gently simmer until the water evaporates half and then turn the tofu400 g minced beef, 100 g cornstarch / cornflour, 3 tsp garlic, 1 egg, 1/2 tsp baking powder, 1 tsp beef stock, 1 tbsp fried shallot, β cup ice water. Using gloves, make the meatballs by squeezing the mixture a few times between your thumb and forefinger until smooth. The meatball should be the size of a ping pong ball.
Add the spice mixture to the hot oil (where you fried the meat in), saute on low heat for 5 minutes. Add the onion, leek and celery together with the remaining oil and ketjap manis. Fry on high heat until the vegetables are halfway cooked, about 5 minutes. Add the rice, meat and prawns, and fry for another 5 minutes.
